Wood Availability And Price
We are located in Fort Collins, Colorado, and it is important to us to use species that are sustainable and domestic. There are amazing woods that come from Europe, and Asia, as well as the tropics but we use American grown trees.
Not all woods that were once abundant are still available. American chestnut probably would have made wonderful cutting boards, but chestnut blight effectively eliminated these trees in the early 20th century. Elm was once used for all manner of woodworking, but Dutch elm disease has made elm of larger size rare and expensive. Ash is a wonderful, versatile wood with great workability, perfect hardness and low extractives. It breaks my heart that between ash dieback disease and the emerald ash borer insect, ash is becoming unreliable, at least in my area and in sizes that I need.
